There are already some articles on the only vegan restaurant ” vegan kitchen and bakery ” in Zurich published in the media, whereby mostly the vegan menus available there were described and evaluated. Now we would like to change the owner of vegan kitchen and bakery for a change . In an interesting interview, Lauren Wildbolz told me about her own way of life.

In addition to working in the restaurant, the 30-year-old sympathetic Lauren Wildbolz studied fine art at the Zurich University of the Arts. Since her 14th year she is a vegetarian. She became vegan only three years ago. When Lauren was 14, a Vegi brochure came into her hands, and the massaging was reported. At that time, there were hardly any TV programs on this topic. After Lauren had finished reading the booklet and was no longer able to banish the bad pictures with the suffering animals, she decided not to eat any more meat. She also felt no desire for flesh and did not feel this as a renunciation.

Three years ago she suddenly had an “inspiration” that she had to change something. Spontaneously, she decided to eat three months of vegan diet. Lauren wanted to see how her body would react. The result was remarkable: Lauren found that she had much more energy. That convinced her and she lived from now on only vegan. Even if it first turned to the vegan diet “just” for its health, political, animal protection, environmental and ethical aspects were soon added.

But which way did Lauren Wildbolz go to vegan kitchen and bakery ? While studying, Lauren also wanted to make some money and came up with the idea of ​​promoting vegan food. So she grabbed a rice cooker and vegetables on her bike carrier and brought the vegan food to various occasions, from vernissages to techno parties. First, she went on her own initiative, then gradually invited by interested parties to bring her vegan delicacies to wife and husband.

In the middle of 2010, Lauren discovered an empty shop in Zurich district 4, which she immediately rented, and in December 2010 she opened the vegan kitchen and bakery. Lauren wanted to make a symbolic sign at the opening and asked the staff to refrain from wearing leather, at least at the opening. But, of course, she was also aware that she could not impose on the guests of the restaurant not to wear leather.

Lauren’s parents were always open and let their daughter go their extraordinary way, but for their vegan ideas they could not warm up properly. So Lauren regrets that her next family and relatives have not become vegetarians. But she found the balance in the circle of friends, where she received very positive reactions.

But even the usual advice was not spared Lauren: She should not be too extreme and at least the compromise to put also vegetarian and not only Veganes on their menu card, otherwise the whole thing would be even sectarian, and finally they would not as Special world-beautifier.

Once in a press report: “even for hardcore vegans there is now a restaurant in Zurich”. That disturbed Lauren very much. Finally, in the newspapers is never written by “hardcore meat eaters” or “hardcore butcher”!

Currently, the future of vegan kitchen and bakery at Müllerstrasse 64, is still uncertain for financial reasons. Sure, Lauren wants to make a difference. To continue to promote veganism remains her baby, she says with idealistic determination.

Although Lauren Wildbolz has never taught a cook, she has cooked many people, for example, on a sailing ship and on a catamaran in Ibiza, where she served Spanish Telenovela TV stars. For a while she also worked in the “Saft-Laden” in Zurich’s old town, but she was not vegan.

COOKING SKILLS

Despite her art studies, Lauren now sees herself as a cook rather than as an artist. But the hospitality industry is hard, she emphasizes. For economic reasons, Lauren Wildbolz plans not only to operate the restaurant, but also wants to use the restaurant for   private events, cooking classes, catering, lectures, etc., although she does not want to lose sight of the vegan. She also wants to publish a vegan cookbook – the first vegan cookbook in Switzerland! She has a publishing house already, and the publisher is an enthusiast in her restaurant.

I note that vegan kitchen and bakery is very minimalist and spartan. There are only three simple tables with wooden benches in the rather big restaurant. I’m talking to Lauren cautiously, and mean there would be enough room for a lot more tables and why she would not take advantage of the place? Or does she have so few guests that the three tables are enough? Not at all, Lauren replies, on the contrary, she often has too few places at her disposal, but she can not offer more seats in the restaurant business for legal reasons.

In total there are only 10 places in the restaurant and in the summer there are an additional 10 places in the open. Why? Lauren explains: Because there is no disabled toilet and not the ventilation prescribed by the law. Such structural changes would not be a question for them for financial reasons, she added. If they did not stick to the law and would be caught, you threatened a succulent bus from about 800? When you consider what kind of ridiculous buses are “punished” by animal torturers, this amount is almost grotesque!

I am stunned and can only shake my head in disbelief. Such officials, who take the written law so strictly and rigorously, we urgently need in the animal protection area! But right there remains the law for political reasons and in favor of the meat lobbies, dead letter.

Therefore there is only one thing: the meat consumption has to be reduced. The future is vegan! And that is exactly in the sense of Lauren Wildbolz and her vegan kitchen and bakery !
